Mabel Johnson’s Fried Squash
(Jilted By Death – Page 88)
3 – 4 Yellow Squash
Self Rising Corn Meal (About ¾ cup)
Salt
Pepper
Canola oil (or vegetable oil if you prefer)
- Scrub squash with a vegetable brush and wash thoroughly. Do not peel.
- Cover bottom of frying pan with Canola Oil about ¼” thick. Heat to Med. High
- Cut squash into round slices approximately ¼” thick. Roll in cornmeal on both sides and place in a single lawyer in pan. Salt and pepper to taste. Turn squash when golden brown and fry until brown on bottom side. Remove from heat and drain on paper towel.
- Repeat process until all squash is fried.
If frying a lot of squash, add cooking oil as needed and adjust heat to keep from burning.
Serving per person: 4-6 slices Best served hot
Pam Broughton's Meatloaf
(Duo of Opposites -- page 85)
- Mix together: 2 1/2 - 3 lbs. ground round or other ground meat; 1 large onion - chopped, 1 medium green pepper - chopped, 2 - 3 cloves garlic - chopped (optional), 1/2 cup ketchup, 2/3 - 1 cup bread crumbs, 1 beaten egg, 3/4 cup shredded chedder cheese, salt and pepper to taste.
- When completely mixed, place into a large loaf pan or form meat into a loaf in a 9x13 baking dish. Pour 1 can of undiluted cream of mushroom soup over loaf and bake at 375 degrees for 1 - 1 1/2 hours (depending on oven and the size of the loaf)
- Remove from oven and let stand for at least 20 - 30 minutes before slicing.
Serves 6 - 10 people depending on size of loaf and thickness of slices.
Brent Leighton's Shrimp Burgers
(Your Place or Mine -- To be released soon)
1 pound raw deveined shrimp; 1 stalk celery; 1/2 med. yellow onion, 1/2 green pepper, 1 clove garlic (optional); 1 Tbs. parsley (fresh or dried); 1 Tbs. Old Bay; seafood seasoning; zest of 1 lemon; salt and pepper to taste.
- Chop or use food processer to grind 1/2 of the shrimp, Add celery, onion, green pepper, garlic & parsley (all finely chopped or ground in food processer.) Mix well and add whole shrimp, Old Bay, Lemon zest, salt and pepper. (If you like it spicy you can add chopped hot peppers or tabasco sauce)
- Shape into patties by hand or with a spoon. Cook on Med. hot heat in a couple of Tablespoons of Olive or Canola oil. (3-5 minuets on each side.) They are done when the shrimp turns pink.)
Serve on buns with lettuce, tomato and mayo if desired.
Makes 4 large burgers.
